chicken artichoke dinner

Chicken grilled or broiled then cut into small pieces. (i prefer the breast)
canned artichokes (or hearts of palm work great I love them too) or frozen (fresh takes too long to prepare for me lol)
capers
1 lemon
1tsp olive oil
salt & pepper (to taste) EZ on the salt. (I use sea salt less sodium,)
canned or fresh baby tomatos (i use fresh, but canned tomatos produce MORE lycopene which is a great CANCER fighter)
fresh garlic (1 clove)
fresh cilantro (small handful cut up)
red or spanish onion (small)


First I grill up my Chicken then cut into pieces.
I then start my sautee pan with oil I throw in my garlic, onion and let those cook till they are just about soft then I add in my artichokes, capers tomatoes (no liquids btw from any of the canned items) and my chicken. I let those cook on med high till everything gets all cozy with each other then I add an entire lemon (squeeze the juice outta of it) and add fresh cilantro stir and serve.

I keep extra grilled or oven cooked chicken in the fridge for meals like this. I then keep the left overs for later on in the week. You can freeze your meals if you make too much and you dont feel like eating it again in the same week.

Add or take out what you dont and do like to make it more you.
